Tamsin Waley-Cohen’s Cumin Crusted Salmon

Ingredients:
Salmon, either fillets or a side
At least 1 lemon
Cumin seeds
Dried thyme
6-8 cloves of garlic
Olive Oil
Salt
Method:
For a small side of salmon, or approximately 6 fillets, grate the zest of one lemon, combine with a generous handful of cumin seeds and the same quantity of dried thyme.
Crush 6-8 garlic cloves and add a generous couple of pinches of salt, I find a crystal salt like Maldon works best for this recipe.
Add a tablespoon or so of olive oil and a generous squeeze of lemon juice to create a paste.
Lie the salmon skin-down in a baking tray and spread the paste generously and evenly over the flesh of the salmon.
Bake at 180 degrees for 20 minutes and serve!
