Meghan McCrimmon Foster’s Jim’s Sauce Pasta

The best and easiest pasta sauce recipe, 4 ingredients that you can keep in your cupboard and have ready in a pinch when people turn up unannounced. The sauce is named after Jim, a friend of my father who passed away in the 1980’s

1 tin chopped tomatoes (400g)
1 clove garlic, minced
1 tin of anchovies in olive oil, olive oil reserved
Handful of fresh parsley, chopped.
Drain olive oil from anchovies into a small saucepan. Heat over medium heat until shimmering, then add garlic and stir for 30 seconds. Add anchovies and stir for 30 seconds more, but don’t burn. Add tin of tomatoes, bring to boil and then reduce heat to simmer and cook covered for 20 mins. Add chopped parsley and cook covered for 10 mins more. Serve with your favourite pasta (I like spaghetti) and lashings of Parmesan cheese.
