Lina Dambrauskaite’s Banana Bread

Here's my little recipe for a wonderful banana bread. Can be made in just over an hour and will stay moist and lovely in the fridge for a couple of days!



You'll need:


250g  flour

1 teaspoon baking soda

a pinch of salt

1/2 teaspoon cinnamon

115g of butter, softened

120 g of brown sugar

2  eggs

80g of Greek yogurt or sour cream

4 mashed bananas

1 teaspoon vanilla extract


Optional: walnuts/ pecans/ hazelnuts or chocolate chips! (reduce sugar to 100g if using chocolate :)



Preheat the oven to 180°C. Grease the loaf pan with a little bit of butter/oil. Make sure that the butter and eggs are of room temperature (so the butter should be quite soft).


Combine the dry ingredients (flour, baking soda, salt, and cinnamon) and set aside.


Beat the butter and sugar together until creamy, add eggs one at a time. Add in the yogurt, mashed bananas and vanilla extract. Fold the dry and wet ingredients together. If you're adding nuts/chocolate chips, add them as the last step.


Put the batter into the baking pan and bake for 60-65 minutes. At around 35 minute mark, put a sheet of aluminum foil on the top, so that the top doesn't get too brown.


It's done when an inserted toothpick comes out clean! Allow it to cool before enjoying it with butter, cream cheese frosting, nutella... Whatever your heart desires!
