Hannah Lindsey-Clark’s Mummy's "Minestrone"
This is just a random soup I make for my kids and they call it Mummy's Minestrone. It's quick, easy and yum! When I'm in and out at work, rehearsing, practising etc it can be hard to find time to cook but this is easy and everyone loves it!
INGREDIENTS
1 X chorizo
2 X garlic cloves
2 X 400g tin of chopped tomatoes
1 X 400g tin of cannellini beans
2 X large carrots
250g soup pasta or chopped spaghetti or orzo
Mixed herbs
Salt
Pepper
Stock
METHOD
Mince garlic
Chop Chorizo and carrots into coins
Heat olive oil in a large pan
Add garlic and stir for 2 mins
Add chorizo and stir until browned
Add carrots and stir for a further 2 minutes
Add the tins of tomatoes plus 4 tins of water
Bring to the boil
Add stock
Add pasta and beans and simmer until cooked through
Season to taste
Voila!
