Haley Dove Montoya’s Hawaiian Loco Moco Won’t Kill You

Here's a quick, GF, go to din din. It's my take on the Hawaiian Loco Moco (sticky rice, beef patty, gravy, fried eggs).
My family didn't have the means to travel when I was growing up but my childhood best friend's family had a house on Maui and I would get to go with her. Magical. As a college student I nannied for a family and they also took me to Maui on their family vacations. It was work? Also magical. I saw a loco moco once and thought it looked amazing. Now I make them often but in a fashion that won't clog my arteries.

The Loco Moco That Won't Kill You:
Cooked quinoa. Sometimes when I'm feeling fancy I'll add chicken stock rather than bouillon to my quinoa water.
Diced bell peppers, tomatoes, avocado, and minced red onion.
2 fried or poached eggs with yolks runny.
Shredded parmesan cheese.
Prepare all ingredients. Put them in a bowl in the order above. Eat it. You're welcome.
