Erin Morley’s Red Lentil Soup
I love this soup because it covers all food groups (I’m counting lentils as a carb, but you can also dip bread into your soup if you like), constitutes a whole meal, and people of all ages love it. It’s my go-to comfort food, and it happens to be healthy, too! Basically this is red lentils + whatever veggies you have on hand + whatever meat (I prefer bacon or Italian sausage).
I boil a whole package of red lentils in water first, no need to drain. Then I throw in two or three cans of diced red tomatoes, then I start the bacon or sausage up in another pan. Then I throw in chopped carrots, then frozen or fresh spinach/peas/kale, then kalamata olives (pitted and chopped in half), then finally the meat when it’s finished fully cooking in the other pan. Enjoy!
