Christine Goerke’s Nonna’s Sour Cream Chocolate Cake
As an Italian American, we all know that the best food is Nonna’s food. And there is no better chocolate cake than this. It is crazy good, simple to make, rich and delicious. An optional drizzle of caramel with a sprinkle of smoked sea salt makes it fancy, or serve it with fresh whipped cream and a compote of berries of your choice.
Ingredients:
2 cups flour
2 cups sugar
1 cup water
1/4 cup shortening
1 1/4 teaspoons baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1 teaspoon vanilla
2 eggs
4 oz. melted unsweetened chocolate melted and cooled to room temp.
3/4 cup sour cream
Method:
Heat oven to 350
Grease and flour 2 - 8 or 9 inch cake pans. I use cocoa powder instead of flour
Put all ingredients in bowl. Using mixer , beat on high for 3 minutes. Divide into pans and bake 30-35 minutes.
Frosting:
I - 6oz. bag of high quality chocolate chips
1 cup butter
2 1/2 cups confectioners sugar
1/2 cup light cream
In medium sauce , combine chocolate, butter and cream. Stir over medium heat till melted and smooth.
Remove from heat and add confectioners sugar
Put ice in a wide bowl and set icing pan on top of ice.
Using hand mixer, beat till desired consistency is reached. Ice cake and eat!
