Barry Banks’ Olha’s Scones

After our story of the next door Neighbour leaving fruit and lemon zest scones on our doorstep......... this arrived on our doorstep this morning along with a carton of Semolina! I can attest to their absolute scrumptiousness (it appears that that isn’t a word, but should be!) It also attests to that hidden ingredient, LOVE!



2 cups of flour (1.5 cups of all purpose flour, 0.5 cup of semolina flour)

Half tsp salt

1 tbsp baking powder

0.5 cup sugar

0.5 cup dried fruit (cherries, cranberries or currants)

0.5 cup heavy (double) cream

lemon or orange zest


A. Mix together flour, salt, baking powder and sugar in a bowl

B. Put the dried fruit and zest into the cream, and mix.

C. Pour into the flour mixture and mix with a spoon or fork until you get a ball of dough.

D. Place on a lightly floured board and press into a round flat shape. Sprinkle with sugar and cut dough circle into 8 wedges.

E. Bake at 425 degrees for 10-15 mins, until golden.
